Adventures in my Kitchen: Rendering Lard

Last weekend we took the annual "Know Your Farms" Tour.

We first went to Barbee Farms, a sixth generation farm family. They grow and harvest a wide variety of vegetables year round. We took a farm-wide hayride and learned that 98% of their business is from local consumers. After the tour we stopped in their on-farm market stand where we enjoyed some homemade ice cream. I also bought some arugula and kale. They're real nice folks and I plan to make good use of their year-round farm store!

Next we returned to a favorite from our tour last year, T&D Farms. As owner, Todd Maudlin explained on our hayride of his property, they grow grass-fed beef, pastured pork, chicken and free-range eggs. The cattle are a beautiful cross between Charolais and Limousine breed. The meat is lean and tasty, but what I appreciated most was that the cows are grass-fed AND finished. No grain or soy is given to these cows! After our hayride, we stopped off at their farm stand to buy some products. I was so excited to come away with nitrate-free bacon, pork fat and chicken feet {That's a post for another day!}.

I purchased about 2 pounds of pork fat for $1.50 a pound!! My first attempt at rendering I came away with 3 cups of lard and a plate full of cracklings, or as my children corrected me, in the South we say cracklins! I salted them and we ate them. My son loved them and said they tasted just like the ones from the gas station! I think that was a compliment.

Because it has a higher smoke-point, I'll be using it instead of butter for my cooking, baking and frying. Can't wait for some lard-fried french fries. {Excuse me while I wipe the drool from my mouth!}

First Days 2011

Preschool is off and running. Our first couple of days have been magical. The children got along like old friends!

This year I am striving to incorporate more outdoor and more sensory activities. In Charlotte Mason's writings she beautifully outlines how important using the senses is for young children.

"In his early years the child is all eyes; he observes, or, more truly, he percieves, calling sight, touch, tatste, smell, and hearing to his aid, that he may learn all that is discoverable by him about every new thing that comes under his notice. " (Vol. 1, p. 65)

"That the knowledge most valuable to the child is that which he gets with his own eyes and ears and fingers (under direction) in the open air. (Vol. 1, p. 177)

In Volume 2, Mason lists several ways to help a child cultivate his senses by means of "incidental object lessons." Instead of contrived object lessons where an object is brought to the child and a lesson given, Mason advocated using what I like to call teachable moments to "assist the child to educate himeself on Nature's lines, and we must take care not to supplant and crowd out Nature and her methods with that which we call education." (Vol. 2, p. 182)

Contrived object lessons, Mason calls, "miserable fragments" of information "presented to the children which have little of the character of the object in situ (referring to the natural habitat or environment). (Vol. 2, 180)

In contrast, Mason says, "object lessons should be incidental; and this is where the family enjoys so great an advantage over the school. It is almost impossible that the school should give any but set lesson; but this sort of teaching in the family falls within the occurence of the object." (Vol. 2 p. 182)

Now Mason didn't say it was impossible to give these incidental object lessons, these teachable moments that pop up out of the blue. She said it was ALMOST impossible. That gives me all the motivation I need to at least try.

This week we got really messy painting Sweet Gumballs we collected on our first Nature Walk.

We also had a blast squirting colored vinegar onto a tray of baking soda! The kids were amazed at the reaction, bubbling and fizzing. This turned out into a beautiful, collabrative unique masterpiece!

We couldn't just leave it like that. "It feels salty!" one exclaimed!

GAPS Intro Day 2 & 3

While researching the GAPS diet, I noticed that most people experience a die-off reaction ranging from mild to severe. According to the GAPS website:

DETOXING, DIE-OFF, & OTHER SYMPTOMS

What are "die-off" symptoms?
As you introduce a probiotic into the digestive system, the pathogenic bacteria, viruses and fungi there will be dying, which releases more toxins. This increase in toxicity may produce a so-called "die-off" reaction, when you may feel more tired or generally "off color". It is a temporary reaction and usually lasts from a few days to a few weeks in different people....If you get a severe reaction, cut the daily dose [of probiotics, my note] down to the previous level and settle on it. Then carry on increasing the dose.

I've been anticipating not feeling well as the toxins die and release into my system before being eliminated. So far, my symptoms have been quite mild.

Day 2 was pretty good. Only die-off symptom to speak of is fatigue.

Meals consisted of shredded boiled chicken, broth & leftover butternut squash soup, steamed acorn squash and onion leek soup.

Between noon and 2 o'clock I felt extremely tired and a little weak. I was having a hard time keeping my eyes open. Thankfully, I was able to get off work early. Came home and ate some more steamed acorn squash and relaxed for a bit which helped.

Day 3 has been good also. Again, I had fatigue after lunch. Rested my eyes for a few minutes and was fine.

Meals today were boiled burgers with a cauliflower & carrot "gravy", cauliflower boiled in stock, mashed carrots and onion leek soup.

Appetite is fair. Eating about every three hours since the food is so easily digested. Getting tired of all the boiled foods. Ready for something chewy. Had cravings for my after dinner chocolate chip cookies (sugar) twice. Cured (~~suppressed~~) by drinking some mint tea with a drop of honey.

Haven't managed a recommended Detox Bath yet. I know it will help with detoxing, but symptoms seem so mild, I've neglected that part. Maybe I can work it in tonight.

Since we're doing so well, we'll do one more day on Stage 1. If all goes well tomorrow, we'll be skipping to Stage 2. Then we can start having eggs and fermented veggies!

Taking the Plunge into GAPS Intro

After months of studying, research and learning I finally jumped off the deep end into the GAPS Intro Diet.

GAPS stands for Gut and Psychology Syndrome. It was coined by a Russian doctor as she sought to help her own autistic son recover.

The premise is that an improper balance of gut flora leads to a host of ailments such as autism as well as mental disorders, auto-immune disorders and degenerative disorders.

Why am I doing a diet that was originally developed for Autism?

First, a (not so) little history:

I have had psoriasis, an auto-immune disorder that speeds up the skin's regeneration process for almost 18 years. I've tried many treatments to varying degrees of success or failure. When I was first diagnosed, over 75% of my body was covered with strange scaly, inflamed, dry skin. This breakout was first treated as a bacterial skin infection and a course of heavy duty antibiotics was given of which there was no improvement. After a biopsy, the doctor said it was guttate psoriasis, and even though I knew no other family sufferers, it's a hereditary disorder that had been simply latent until that point. He said I'd always have to deal with it and referred me to a dermatologist. The derm's recommendation to pump my system full of horrible chemicals like methotrexate, a chemotherapy drug that destroys the liver, I declined. I was also told to try UV Therapy where I'd stand in a light box to be zapped with high voltage UV rays for 10 seconds three times a week. Although that brought a bit of relief, it took me longer to disrobe than to stand in that box. With three little children tagging along, that treatment was not a long term option. At this point I gave up on an allopathic approach and haven't taken any medications since.

With little to no understanding of natural treatments and based on an article in some magazine, I prescribed myself a high-quality multi-vitamin and echinacea. Guess what! Relief. The irritating beast was tamed to a manageable level. That sent me on a nearly two decade quest for healing.

After many treatments, including but not limited to herbs, acupuncture, massage therapy all with moderate relief, but not recovery I pretty much threw in the towel and just tried to ignore it.

Summer always brought improvement. Lots of sunlight and vitamin D plus the humidity of the Southeast always helps. Despite minor flare ups here and there I was able to live with it without much thought, until last fall that is. That's when the sleeping beast awoke in a rage.

My skin felt like it was either burning or crawling all the time. Unable to ignore it any longer I resumed my quest for healing in several directions. My chiropractor has a lending library from which I borrowed and read Healing Psoriasis. This book reminded me that the skin is our biggest detox organ and began making changes in my diet to improve the health of my liver and other detox organs. I began going to a wonderful homeopathic doctor who prescribed the perfect constitutional remedy that cleared 85% of the psoriasis. Still convinced I was overloaded with toxins, I stumbled upon an informative website, Heal Thyself, where I learned about kefir, fermented foods, gut dysbiosis, leaky gut syndrome and all the havoc wreaked in a body with these issues, one of which is auto-immune disorders like psoriasis. Eventually I came across GAPS.

The GAPS diet focuses on healing the gut, sealing the gut wall and feeding the body nutrient dense foods to that end. The Intro GAPS diet is basically an elimination diet designed to give your body easy to digest foods adding more complex foods based on toleration. Once able to tolerate most foods, you continue into the FULL GAPS diet of no grains, no sugar, no processed, nutrient dense foods.

Today, with high hopes and after months of preparation including reading Nourishing Traditions, scouring dozens of Real Food blogs, taking a 12-week online cooking class, purchasing a wonderful 30 day meal plan and stocking my freezer full of chicken broth, my amazing, supportive husband and I dove into a big batch of butternut squash soup, boiled chicken, boiled broccoli and broth boiled onions.

To monitor the effects, I'll be recording our progress as we go through the Intro Diet.

Day One:
J: Several new psoriasis spots on thighs and calves. Scalp is extra itchy today. Felt sleepy all day.
W: Stomach was queezy late morning. Slight fatigue.

Overall good day for both.
Plan to take a detox bath this evening to help purge any die-off toxins.

Zucchini Noodles with Italian Sausage and Basil

Our garden has been exploding with cucumbers, yellow squash, broccoli and herbs this summer. I've enjoyed cooking straight out the garden immensely. There's something deeply satisfying about walking out your back door, picking food that you grew and cooking it up fresh.

Now the tomatoes are starting to come in! The zucchini has been a bit slower going and I finally had enough to use in a meal.

Backing into the GAPS diet this year, we've been cutting down on grains, which I haven't missed too much. Expect for pasta.

The last time I made zucchini noodles was years ago. We really enjoyed them, so I decided to give it another try especially since I just got a mandoline slicer!

This recipe was such a big hit! I wanted to write it down fast before I forgot it!

Zucchini Noodles with Italian Sausage and Basil

Zucchini Noodles with Italian Sausage and Basil

Prep time: 15 minutes
Cook Time: 15 minutes
Serves 4

Ingredients:

5-6 medium zucchini, sliced on a mandoline, french fry cutter for wide or julienne for thin (Don't worry if you don't have one, just use your vegetable peeler, pressing harder than you normally would on all sides of the zucchini until you get down to the seeds)
1 lb. italian sausage, casing removed, diced into 1 inch pieces. ( I used sweet sausage and added some heat with crushed red pepper flakes. If you use spicy sausage you can omit the pepper flakes.)
1/2 yellow onion, diced
1 TBS Coconut oil
2 cloves garlic, minced
2 TBS Extra Virgin Olive Oil
2 TBS fresh basil, finely chopped
1/4 cup good white wine
Parmesan Cheese
Sea Salt and pepper
Crushed Red Pepper Flakes (optional)

Instructions:

Melt coconut oil over medium high heat in large frying pan. Add sausage, season with salt and pepper. Saute until golden brown and slightly crispy on the edges. Transfer to a large serving bowl. Add onion to pan, saute until tender. Remove to the large bowl with sausage. Pour 1 TBS EEOV into pan and half the zucchini noodles. Season with salt and pepper. Saute until tender about 2 minutes or less. Add half of minced garlic and half of basil. Saute 30 seconds. Add to the large bowl. Repeat with remaining EEOV, noodles, salt & pepper, garlic and basil. Place last batch of noodles in the big bowl. Pour wine into hot pan carefully. Scrape bits loose from bottom of pan letting wine reduce down by half. Pour wine broth over noodles and sausage. Toss together. Sprinkle with fresh grated Parmesan Cheese.

Hometown Heroes on the Food Network!

During this busy holiday weekend, be sure to catch

Sunny's All American Celebration : Food Network Specials : Food Network .

The show is a tribute to the men and women in our Armed Forces who have sacrificed their time and in some cases their lives to preserve our freedom.

It aired once on Saturday, but you can see it again on Monday, July 4, 2011 at 6PM.

The final segment of the show is a tribute to Spc. Christopher Barton who was killed in action on May 24, 2010. Chris was a friend to all my children. They have felt his loss deeply.

In memoriam, Chris' family established a scholarship fund. His mother and some mothers of other soldiers decided to publish a cookbook, Hometown Heroes, with all proceeds going to the scholarship. I don't know the whole story, but someone told the Food Network about the cookbook. They decided to include Chris' story in a special with Sunny Anderson and you can watch the moving results on Monday, July 4 at 6PM.

Insalata Caprese

Homegrown Tomatoes, sliced
Fresh Mozzarella, thinly sliced
Large, Fresh-picked Basil, rinsed and patted dry
Minced Garlic
Extra Virgin Olive Oil
Porcini Olive Oil,(This is purely optional, but gave this salad the extra "Ummm, Ummm!" factor)
Sea Salt
Fresh cracked, Tri-colored Peppercorns

Arrange tomatoes on a plate, first. Top with Mozzarella and Basil. Sprinkle Garlic. Drizzle Olive Oil over everything. Finish off with Sea Salt and Pepper.

What is Your Measure of Success?

Just watched a fascinating video called the "College Conspiracy" which highlights several issues that need to be addressed sooner than later in our American society.

I had to begin rethinking what education and success truly meant several years ago when my eldest son, who struggled throughout school, graduated high school. He was disillusioned with the educational establishment and had absolutely no desire to continue his education.

After reading a great book explaining how to continue education but outside of the traditional brick and mortar, College Without Compromise I tried unsuccessfully to steer my kids down this route. This book detailed how to obtain a degree by doing the coursework at home, online and/or at community college, saving thousands of dollars and time. None of my kids have felt led to take this path, but I let them know its still an option! :)

Son #1 entered the work force at age 16 and was making decent money. After 2 1/2 years of employment at the same place , however, the hours dried up as did his paycheck. Eventually, he concluded his best option would be to join the Job Corp and study carpentry somewhat as an apprentice in a real wood shop.

Meanwhile, my second son had graduated high school, also fed up with the school system. Deciding Job Corp was his best option, he choose to study welding. They both left for training in February 2010 with our blessing, although not according to my plan.

I had high hopes that my children would excel in school, attend college, land a dream job, and live on Easy Street, happily ever after. The route they chose really challenged me to question what it really means to be successful. Do I want my children to join the rat race? What is the main point of getting that dream job? To be chained to a desk 60-70 hours a week? To make lots of money to buy lots of stuff? To be so tired and stressed that there is no time nor energy to enjoy the fruits of his labor, his wife, his family?

I was caught up in the American Dream mentality. I realized this dream of mine was rooted in a man-centered worldview. That view is not in-line with my beliefs anyway. We are to work as unto the Lord, sharing the blessings of God with others, not hoarding them for ourselves.

I want my children to love what they do, do what they love and do it for the glory of God.

"But seek first his kingdom and his righteousness, and all these things will be given to you as well."

This is where true happiness is found. Serving the Lord and others needs. Not selfishly acquiring things that will eventually rust and rot.

Mike Rowe or Discovery Channel's Dirty Jobs recently went before a Senate Committee to testify the need for more skilled laborers. Excellent article, please take time to read it here.

Graduates with Bachelor's Degrees are having a harder and harder time finding a job and loaded with debt, are being forced to move back home with their parents. This is happening while there are thousands of vacant skilled laborer jobs. Farmers, plumbers, electricians, carpenters, welders. These are not jobs you can trust just anybody to do. You want a person who is skilled. Gaining skill comes gradually, over time with experience and from mentoring. Basically from getting your hands dirty.

I am thankful my boys both followed their hearts. Three years out of high school, Son #1 decided that he was ready to further his education and enrolled in community college.

Son #2 just graduated with honors from Job Corp and began his first welding job this week.

We are thankful for God's guidance. We know He has plans for both of them and He will accomplish His purposes in their lives.

To me, there is no greater measurement of success and joy than to hear that my children are walking in the truth. What is yours?

10 Tips for Real Food Newbies from Nourished Kitchen

It all started with homemade Laundry Detergent.

That led to homemade All-Purpose Cleaner,

which led to deordorant and toothpaste,

then dishwasher detergent,

then shampoo and conditioner .

After eliminating many chemicals that our bodies come into contact with in our environment, we moved on to what we actually put in our bodies.

Now, I would have said and you would probably agree that we are basically healthy eaters. No fried foods, lots of fresh veggies, lean meats, whole grains....however, I am known to kill a bag of Salt & Vinegar chips in no time flat and let's just say I have a chocolate chip cookie habit, but other than that, I thought we ate fairly well. Oh, and coffee, can't forget we drink a whole pot every morning with non-dairy designer creamers. I do realize we have lots of room for improvement.

Then I discovered Nourishing Traditions and the Weston A. Price Foundation and suddenly realized everything I thought I knew about healthy eating was basically wrong. But now I have seen the light and eating healthy has never been so much fun!

So far, I've learned to make my own probiotics, culture milk, lacto-fermented veggies. The truth about fat, cholesterol, MSG, high-fructose corn syrup, flouride and more has been exposed! Why its important to soak nuts and grains before eating. How to make ghee, render tallow, and wonderful bone broth are all new things I've learned this year as well.

I know there are lots of health nuts and I hate to come across as one too, BUT, since reducing our toxin exposure through diet and environment,and finding an effective homeopathic remedy (which works to heal my body rather than supress symptoms), my 18 year long issue with psoriasis has seen marked and definite improvement. (I have pictures, but I'll spare you for now!)

Now I'm convinced the Standard American Diet (aka SAD) is the culprit to most health issues, phyical and mental. Everything is over-processed and deplete of nutrtional value. Adding synthetic nutrients is NOT the same as the real McCoy. Eating whole foods, from local sources is by far a better choice. Getting back to basics, making things from sratch. Traditional Cooking is a lost art thats making a comeback.

Homemaking is like Washing Feet

In Preschool this week, wejust read in the Jesus Storybook Bible, the story of The Servant King. It tells of how only the lowliest servant would wash the "stinky feet" of others. Yet, Jesus in His last earthly act of service before his death stoops low to wash the "stinky feet" of the familly of God.

In this encouraging two-part article,the author likens the simple, ordinary and oft-times hard work of homemaking to washing the feet of our own family. Part two, paints the homemaker as anything but boring and dull. Read for yourself and I pray you'll be encouraged to give the best of yourself to your family!

Rejected Super Bowl Ad Mysteriously Airs?

You probably heard that Fox rejected a Super Bowl ad for John 3:16, citing it may offend some people. Funny, since Fox doesn't usually mind offending people.

Nevertheless, the ad still managed to air in the DC and Birmingham markets flooding the LookUp316.com website with hundreds of thousands of hits. Hmmm.

Still don't see what's so offensive about it. It only encourages those curious to look up John 3:16.

I did look it up and I liked it. I think the ad was great and the website does a great job explaining what John 3:16 means.

The year was 1978. I was but eight years old. As was usual, invited to church by compassionate neighbors, I tagged along each Sunday. I'm not sure if the invitation stood each week, nevertheless, I showed up on the Carmichael's doorstep each Lord's Day ready and eager to go to church. Details are fuzzy, but that year, somehow, I was assigned to be Gabriel in the Church Christmas play. I had one line: 'Glory to God in the Highest, and on Earth peace, good will toward men' (Luke 2:14)

I practiced my part over and over imprinting the words upon my mind and hiding them in my heart. A seed was planted that year, though sat dormant for many years until God's good grace watered it and gave it growth. It may be the first Scripture I ever memorized. It still stands out in my heart.

This song, inspired by the old hymn, was originally a poem, and is based on that treasured verse:

The Story Behind "I Heard the Bells on Christmas Day": "One of America's best known poets, Henry Wadsworth Longfellow (1807-1882), contributed to the wealth of carols sung each Christmas season, when he composed the words to 'I Heard the Bells on Christmas Day' on December 25th 1864. 'Glory to God in the Highest, and on Earth peace, good will toward men' (Luke 2:14). The carol was originally a poem, 'Christmas Bells,' containing seven stanzas. Two stanzas were omitted, which contained references to the American Civil War, thus giving us the carol in its present form. The poem gave birth to the carol, 'I Heard the Bells on Christmas Day,' and the remaining five stanzas were slightly rearranged in 1872 by John Baptiste Calkin (1827-1905), who also gave us the memorable tune. Still reading in Matthew. Currently, The Arrest, the Trial, The Death and Burial of Jesus. I read it slowly.

It may seem strange to be reading about the Crucifixtion of our Lord as we are in the midst of the Advent Season. I know it is not by accident that I find myself reading of the Death of Jesus at the same time we are celebrating His Birth.

The two ~~cannot,~~ must not be separated.

That sweet, helpless Babe, born in a stable, wrapped in scraps of cloth, lain in a feeding trough must be juxtaposed with the brutal, cruel torture that our Savior suffered upon that tree.

The whole world embraces the one event. Idealizing it, imploring us to have Christmas Spirit, Joy of the Holidays and Peace on Earth. That is all well and good as long as that cute little baby with a ring of light around his sleeping face stays in that feeding trough.

The other event, the culmination, the fulfillment of God's promise to send a Rescuer; to once and for all settle the score; to wipe the account books clean, to bring hope to a lost, darkened world tends not to stir up such warm and fuzzy feelings. Rather this event, which accomplished and satisfied God's wrath tends to stir up disdain at best and rage at worst. This is evident to me even by my aversion to read the Scriptural account. This event points the proverbial finger in my face and says: You are the reason I did this!
This Advent season, reading about the Death of Christ, I see it as a glorious event which brings the True Peace on Earth, Never-Ending Joy and Love Everlasting. I am also seeing that while the Birth of Christ is cause to celebrate ( and believe me I am!) I am more aware that this precious Baby is my King who humbled Himself for me. This newborn Babe is the One who would trade His righteousness for my filthy sin. This helpless infant is the One Who would die for me. Oh, How Can it Be?

So, I celebrate because God is Faithful!

Good Advice

We're having Thanksgiving at my house this year. Wayne's grandmother and a childhood friend of mine and her family are coming.

Now, I absolutely LOVE having people over! But, I confess, I we (Wayne is not afraid to brandish a mop!) often scour my house top to bottom each time making it feel more like a museum than a home.

Plus, Wayne's grandmother is a wonderful housekeeper and I fall very short of her standard! (Or that's how I feel!) And my friend, who lives in Tennessee, has never been to my home, so naturally I want my house to look fabulous!!!

For days now, I've been looking around my house and ~~stressing~~ thinking and making mental checklists of everything I want to get done. While I do try to keep the house clean each day (operative word: TRY), I still think: "I'll never get this house looking right!!"

Oh, the pressure!!!!

But after reading this article, I think I'll just let that go. Having people I love in my home is more important than showing off what a great housekeeper I am (or not!).

Initially, I started reading the Gospel of Matthew in preparation for our Middle School Sunday School class's survery of the NT.Been studying this book for about 5 months now. Reading Matthew Henry's commentary alongside.

I recently read Chap. 25, the Parable of the Talents.

You know the story of the Master who left his money to three of his servants. Two of them invested the talents well and doubled them. But the third one buried his talents in fear of the master. When the Master returns he is well-pleased witht the first two servants, but the third, he banishes to the outer darkness.

Matthew Henry's commentary that really spoke to me was this:

"We must never look upon our improvements but with a general mention of God’s favour to us, of the honour he has put upon us, in entrusting us with his goods, and of that grace which is the spring and fountain of all the good that is in us or is done by us. For the truth is, the more we do for God, the more we are indebted to him for making use of us, and enabling us, for his service. Secondly, They produce, as an evidence of their faithfulness, what they have gained. Note, God’s good stewards have something to show for their diligence; Show me thy faith by thy works."

The artist in this video reminds me of the one who used his talent for God's glory. God gives each of us talents to use for Him.

Reminds me of that beloved Christmas song, The Little Drummer Boy. I always get teary-eyed listening to this song because the only gift the little boy has to give Jesus is the talent that Jesus first gave Him.

No matter the amount of the talent God gives us, (and He gives each of His children a special talent) we must use it ALL for Him so that when we stand before Him to give an account, we will hear those words we long for: "Well-done, my good and faithful servant."

As the days grow shorter and the air a bit crisper, The Farm is quite possibly my favorite place to be.

I'm just one of the many who has had the privilege of being welcomed into the large and ever expanding Holdges fold. We visited so often when my children were small that they grew up believing we were kin by blood not just love! Now, I bring my preschool class.

No matter how far I go or how much time passes, each Fall, I'm compelled to go visit The Farm.

The Farm comes alive. Bustling with happy, smiling faces on the lookout for that "perfect" pumpkin. There's lots to do and see at the Farm. One day is never enough. Spend time there. Talk to Frank, the third generation owner of the Farm. You will learn. You will understand. Farms are important. Farms are necessary. Perhaps, if you spend enough time there, you'll meet Mrs. Hodges. You'll know her by her radiant smile!

Nature Walks Improve Learning More than City Walks

The non-stop stimuli of city life may be inadvertently promoting short attention spans; there is simply too much going on vying for our ever-limited attention.

In fact, according to environmental psychologist Stephen Kaplan (also of the Univ. of Michigan), attention is the crucial mediator between green space and psychological benefit. Urban environs place continuous demands on what’s known as directed attention. Natural environments, on the other hand, allow our directed attention to rest. What’s more, they engage a different form of attention that he calls fascination. This involuntary form of attention improves mood, directed attention and cognition.

What 19th century educationalist, Charlotte Mason said,

But a stressed, overworked mother may see no way to give her children more than an hour on the neighborhood sidewalks. Well, long hours in fresh air is the ideal for children. It may not be practical for every family, but when mothers understand the good that a measure can do, they will often work miracles to provide it. A twenty minute trip with a picnic lunch can make a day in the country accessible to almost anyone, but why do it just one day? Why not do it lots of days? Or even every nice day?

But suppose we have those long days in the open air, what is to be done with them so that they are pleasant days? There must be a plan, or else it will be all work and no fun for the mother, and the children will be bored. There is a lot to get accomplished in this large block of time. The children must be kept in a good temper if they are to get the most out of the refreshing, strengthening atmosphere of the great outdoors. They must be left to themselves for a good part of the day to take in their own impressions of nature's beauty. There's nothing worse than children being deprived of every moment to wonder and dream within their own minds because teachers and adults are constantly talking at them, not leaving them a moment's peace. Yet, the mother must not miss this opportunity of being outdoors to train the children to have seeing eyes, hearing ears and seeds of truth deposited into their minds to grow and blossom on their own in the secret chambers of their imaginations. In addition to increasing their powers of observation, children should spend an hour or two in free, active playing, and a lesson or two should be done. (Vol. 1, p. 44.)

Nature study increases your child’s intellect and makes him a more interesting person. “Consider, too, what an unequalled mental training the child-naturalist is getting for any study or calling under the sun — the powers of attention, of discrimination, of patient pursuit, growing with his growth, what will they not fit him for?” (Vol. 1, p. 61.)

Christopher R. Barton made the ultimate sacrifice for his country in Afghanistan on May 24, 2010.

My children were deeply affected by this which in turn deeply affected me.

To honor the memory of Christopher, the family established the SPC Christopher R Barton Foundation which "will strive to touch the lives of Active Duty Soldiers, their families and veterans through scholarships and donations."

One of the many fund raising projects will be the Hometown Heroes Cookbook. Currently, 200 recipes have been collected, but we need MORE! The goal is 500!

Bubbling With Excitement

Preschool is in full swing. Small class this year, big blessings.

Today for the Letter of the Week: "B," we made our own Bubbles.

We mixed:

2 cups of water
1/2 cup of dishwashing detergent
1 teaspoon on sugar.

We dipped the tip of plastic straws in the mixture. That was initially fun, but made very tiny bubbles.

Then we made wands with pipe cleaners. This made GIANT bubbles!!

We also dipped an old strawberry basket in the mixture. Those bubbles came out looking like clusters of grapes that floated off "to China," as one of my students exclaimed!

Last weekend I toured some local farms with my Mother-in Love, Grandmother-in-Love and Niece. First we went to the Elma C. Lomax Incubator Farm where they raise not so much produce, but rather, farmers. Great educational opportunity and easy way to test the waters (or dirt) of "getting back to the land" without taking a blind leap!

Next, we travelled up the road a bit to T and D Charolais Farms. This was more of a ranch with grass-fed cattle from start to finish, free-range chickens and pasture raised pigs. Sampled a bit (or two) of the beef. What I thought must be Filet Mignon because of the velvety texture was actually flank steak! FLANK STEAK!

Needless to say, I had to buy some beef. I chose a bone-in Chuck Roast.

I prepared using the Pioneer Women's Perfect Pot Roast recipe, which despite the unofficial designation as perfect, IS perfect!! The only modification I made was to the roast it in the Crock-Pot. It was deliciously tender, full of flavor and melted in our mouths!

My friend over at Musings is hosting a Coldsaladpalooza today. The first one I submitted is Orecchiette with Mixed Greens and Goat Cheese by Giada.

The pasta only takes 10 mintues or so and then once you pour it onto the salad, it melts the goat cheese into creamy perfection!!!

Here's another that is probably my all-time favorite. I make it for our yearly "Italian Christmas Feast."

I could eat it all year long but, just to keep it special, I only make it during the holidays!

The combination of the beans, salami, cheese plus the homemade vinegarette make my tastebuds stand up and clap!!

I've often thought that these kids find their own inner theater much richer and more interesting than the outer theater of the classroom and, so, naturally, focus on it at the expense of classroom attention. . . The proper fix for this problem would be done at the school level, a place where I am unlikely to have any significant effect. I can, however, help these children concentrate and return their attention to the classroom."[5]

Interesting confession from a highly respected pediatrician at Yale University who treats (with drugs) many children diagnosed with this disorder .

More reinforcement on why I am so thankful for the Charlotte Mason Method.

One of the first (and in my opinion, the most important) principles of CM:

A Child is a Born Person.

They are uniquely designed by God. No two children are the same, nor will they learn the same. Our so-called standard schooling is choking our children. Children are not in the process of becoming people, they already are people. What their niche is has already been determined by God.

What are we doing to our children by forcing them to conform to a one-size fits all system? How can they thrive in a setting with such stringent restrictions?

I'll tell you what. We are teaching them to hate school, to hate learning, to not care about what their calling is. If they can graduate high-school, many turn their backs on education. But thankfully, God is sovereign and He is faithful and He will finish the good work he began. His purposes will not be thwarted.

We have dealt with the issue of ADHD and I have never accepted it. I always believed that my now adult son has strengths and abilities that are on a higher level than what the teachers were able to grasp. He is highly intelligent, but he himself admits having a different way of thinking than most people. His zest for life and imagination were second to none in his early years. His curiosity and energy was boundless. Sadly,years of failing to conform to standard schooling left him feeling dejected, inadequate and incapable.

But glory to God, he is now learning a trade and disovering what his true interests are and for the first time just how capable and smart he truly is.

Tomorrow he's taking off for his first flight, across country, to New Mexico for tradework. Now, the sky's the limit!

Find lots of great stuff there almost everytime. Lots of times I find exactly what I "need." Once I "needed" a picnic basket. Walked in, straight to the back and viola! Picnic basket! Complete with plates, cups and utensils!! We've enjoyed it many times!

Have also found many of the good books on my never-ending, constantly growing book list.

Now through the end of the month you can get a FREE pair of jeans after spending $15 at any Goodwill in the Southern Piedmont region (but not the outlet {huh, a Goodwill outlet?} or computer stores).

Don't know about you, but this sounds like as good an excuse as any to go to GW!

Found this free E-Book today! Good find. Fairly quick read. (UPDATE: On second look, not so quick, acutally quite meaty!)

Particularly like Chapter 11, HOW TO WIELD THE WORLD IN THE FIGHT FOR JOY, Using All Five Senses to See the Glory of God. Particularly interesting to me because that is how I like to find joy, through my senses of hearing, smelling, tasting (my mouth is salivating) touching and seeing the beauty in God's creation. Same technique I use teaching the preschoolers as well. Here's the quote that popped out to me:

"So the question must be faced: How do we use the created world around us, including our own bodies, to help us fight for joy in God?In God, I say! (Emphasis mine)Not in nature. Not in music. Not in health. Not in food or drink. Not in natural beauty. How can all these good gifts serve joy in God, and not usurp the supreme affections of our hearts?" p. 173

My morning devotion answered this quite well:

"God should be your first priority, your second priority and your third..."

Piper continues....

"I assume that this joy is not idolatrous—that is, I assume it does not terminate on the works themselves, but in and through them, rests on the glory of God himself. The works “declare” the glory of God. They point. But the final ground of our joy is God himself. (p.179)"

"We don’t just stand outside and analyze the natural world as a [sun]beam, but [look along to] let the beam fall on the eyes of our heart, so that we see the source of the beauty—the original Beauty, God himself. (p. 184)."

And lastly...

"All of God’s creation becomes a beam to be “looked along” or a sound to be “heard along” or a fragrance to be “smelled along” or a flavor to be “tasted along” or a touch to be “felt along.” All our senses become partners with the eyes of the heart in perceiving the glory of God through the physical world (p. 185)."

This little snippet does not do an iota of justice to the chapter nor the book. I encourage you to read it for yourself.

When in the course of human events, it becomes necessary for one people to dissolve the political bands which have connected them with another, and to assume among the powers of the earth the separate and equal station to which the laws of nature and of nature’s God entitles them, a decent respect to the opinions of mankind requires that they should declare the causes which impel them to the separation.

Wendell Berry Discusses Life

Been contemplating slow living for a while now, the agrarian life in particular at the moment. Almost a time gone by but for the few who persevere to bring the bounty of the earth to our local markets. This weekend I spent lots of time with some of the best people I know, helping shuck and freeze countless ears of corn to put up for winter.

Been learning more about making my own household products this year. Good results on every account.

What would the home look like if we did more of this? If we lived a slower life, a more agarian life. How would we spend our time? I think it would be very different.

The older I get the more I love being a wife and mother, a job of the highest improtance. Feminism would say otherwise. Kudos to Piper for his answer to the question, "Is it OK for Moms to Work Outside of the Home?"

Wendell Berry was introduced to me by way of Hannah Coulter, by my sweet friend, Bonnie. I hope she enjoys this video of this author with whom she corresponds! Right around minute 19, Bonnie, Wendell speaks about a topic we've been contemplating this year.

I've always loved natural remedies and homemade products. I recently made a BIG batch of laundry soap. Let me know if you want some, I have enough for years!

I've also made my own dishwasher detergent, toothpaste and deodorant! Next on tap is some homemade shampoo, facial cleanser and a bath scrub!

I've always loved using herbal remedies and essential oils. Lavender is my oil of choice because of its versatility!

I've been on sort of a mission of late, trying to eat healthier, cut out processed foods, HFCS, gluten and even my beloved nightshades. In doing some research I came across this great little website.

LearningHerbs.com is full of easy remedies and helpful information in an understandable and sometimes funny format.

I've recently learned about Supermarket Herbalism, a FREE video class on to use items found easily in the grocery store for colds, digestion and first aid.

Today I watch a webinar called Herbal Ninja. This was a review of the Supermarket Herbalism with lots of NEW information. I took 9 pages of notes on a steno pad!!! It probably would have been fewer pages, but they had these nice pictures of all the herbs and food items that I couldn't resist sketching!

There Will Come a Day

Been a while since I lated posted. Very busy around here these days. Here's a round-up of our lives since my last entry:
We've had three birthday celebrations in rapid succession,
Resurrection Celebration,
gardening,
driving to the Mountains ever other week to pick my boys,
death of our beloved Misty the Cat,
practice for our upcoming Preschool Graduation,
Flocks,
yard sale-ing,
praying for family and friends with health issues,
Making my own Laundry soap,
Learning about proper nutrition to help my psoriasis,
I Walked for Lupus--5K!,
Homeschool group end of year Fellowship,
National Day of Prayer,
fighting allergies, naturually
and now Mother's Day.

Each of these events have their own stories, not sure if I'll ever catch up on them though!

Today, I'm sitting in my shady backyard, listening to some baby birds in the woods, watching the wind dance across the tree-tops, feeling the cool breeze on my bare feet, drinking coffee and smelling honeysuckle with which I have a love-hate relationship. Love the smell--hate the allergies! I actually just saw our first Indigo Bunting at the feeder!!!

I'm also reading my Bible, preparing for our Sunday school lesson tomorrow. Haggai. Read it before, but each time I see something new. Its a quick read, only two chapters.

Haggai tells the people of God to turn from building their own wealth and security and to focus on rebuilding the Temple of God as they were instructed fifteen years earlier.

The people obey and worship God in earnest. The LORD then sparks their enthusiasm and they begin work on the new Temple. He assures them that although this new Temple now pales in comparison to the original, there will come a day when the future glory of this Temple will be greater than its past glory. In this place God promises to bring peace.

The Lord finishes with more assurance that He is God, He reigns over all the nations and He will honor his chosen people.

And this is exactly what God did! Jesus is the Temple, He brings Peace to His people, His glory is greater than any earthly temple. Because of what Jesus did, we have peace with God, an eternal Sabbath. We are the temple of the Holy Spirit. The Spirit of God resides in His people!

My prayer is that the people of God will hear and obey the Word of the Lord. That God will spark the enthusiasm of His people to walk in a manner which is pleasing in His sight, to bring honor and glory to His Name. That we would rest assured knowing that God is in control, over all nations, over all men and one day we will see Him face to face!

Lots of changes in preschool recently. Last week I said farewell to three of my TUES/THURS regulars. One moved to Florida; two brothers moved back to Oregon. Parting mid-year is always sad for me.

Welcoming new students mid-year is always a challenge. Making new friends and learning new routines is as challenging for the children as getting to know a new student, teaching a them a new routine and getting them up to speed on our class habits is for the teacher.

Two weeks ago, I added a new student and another teacher added 2 more new students. Due to absences today, we had to combine my class with hers.

By mid-year, my class is well-aqauinted with our Nature hikes, often bypassing the playgound going straight to the woods.

As a mini-experiment, I took the two new students from the other class on their first Nature hike. I wanted to test their reaction. Reticence, we would just walk in the grass. But, no reticence so, we ventured inside the woods a few feet.

They seemed to be in their element. Intially, they held my hand, then walked independently at a safe distance from me.

Curiously, they felt the tree trunks, stopped to look at a wild fern, picked up sticks and found a rock that was cold to the touch.

They laughed and clapped when we "found our way out" then, ran to tell the other children and invite them BACK into the woods.

They happily and quickly followed. Soon, all were climbing upon fallen trees pretending to be squirrels and spiders and birds.

Today at preschool we again spent nearly the entire day OUTSIDE!

Three more Tie-dyed T-shirts.

Some of the children, dressed up as Kings, Queens and Super-Heroes, came outside. Imaginations were running in high gear as the royal subjects pretended to fly about.

MUCH fun was had by all romping, rolling and running free about the backyard.

Later on, we went on a Shamrock hunt. The children discovered a whole hillside covered in tiny clover!!

And now I have a great, big, beautiful bouquet of Shamrocks on my window sill!

Ordinary Day, Extraordinary

Just an ordinary day. A trip to the doctor with my Grandmother-in Love. Procedure postponed, new procedures, different ones, scheduled. Waiting, waiting.

Then, too early for lunch, an extraordinary visit to First Presbyterian's Memorial Gardens in Concord. to sneak a peak at the promise of Spring.

Hyacinths, Daffodils, Pansies, Johnny Jump-Ups, Grape Hyacinth sprouts, Star Magnolias, huge Pink Perfections, many buds waiting to burst at just the right moment!! Tulips nor Azaeleas not blooming, but sprouts and buds EVERYWHERE!

"Just wait a little longer," they speak. This demands another visit.

All hearlding the end of a long, cold, wet winter and the coming of new life, new hopes, new plans....everything new!

Everything has a name; but I have much to learn. So many I don't know. Just like meeting new friends, remembering their names is a sign of respect. I will research! Lots of new friends to meet!

Against the gray backdrop of the day, the colors were stunning: Pinks, Yellows, Purples, Oranges: Candy for the eyes, perfume for the nose!! Refreshement for the spirit.

Ambling along the historic streets, we wandered into a coffee shop that boasts the self-proclaimed "Best Coffee in Town." I won't disagree. And great paninni's too!!

An ordinary day, became extraordinary. Precious TIME spent with a great story-teller/conversationalist, enjoying each others company and God's beautiful creation!

Be Out There - National Wildlife Federation

This is it!!! Be Out There Week. March 15-21. What a great way to welcome Spring!

Today in preschool, we spent 3 out of 4 hours outside.

First, we made Tied-Dyed T-shirts. We plan to wear our own artwork when we visit the Mint Museuem of Art in April.

Then, we took a nice long Nature Walk. Sniffing around, we realized the smell of the woods has changed. New life is growing!

We climbed trees, swung on a vine, dug in the sand by the stream and went fishing.

We read a story on the bridge about the Swaggering Crow, who made an appearance for us in our very own woods!!

While hiking back to school, we heard lots of birds, saw several Robins and spied one Downy Woodpecker right over our heads.

Today would've been a perfect picnic day, but we didn't have our lunches. No worries, we'll try it again next time!!

My heart aches for the children who are forced to endure it, especially for the ones who have died from it.

Not only are their methods extreme and outside the realm of normal and healthy child rearing practices, but the doctrinal foundation for these methods contain a level of heresy, including denial of the Christian doctrine of original sin[2][3], which leave them without biblical basis and at odds with the truth that all are in need of salvation which has been provided through Jesus alone[4].

Though the Pearls affirm the value of relationships in parenting in their attractive "tying heartstrings" message, their harsh teachings are in diametric contrast to building healthy relationships. They advocate "training" and "chastisement" of children, starting in infancy[5][6], using methods and means not described in Scripture -- including using ¼ inch plumber’s supply line as a spanking instrument[7] and claiming that a "proper spanking leaves children without breath to complain"[8] -- for stated purposes of absolving guilt and cleansing the child's soul[9].

The combination of an adversarial us vs. them mindset where the parents must "win," physically "disciplining" children until they surrender their will and show total submission, and false doctrine makes the Pearls' methods dangerous. They present a very distorted picture to the world of what it means to be a follower of Jesus and a Christian parent in the world today. It is time for Michael and Debi Pearl to be held accountable for their teachings. We urge other Christians to join us in speaking out against what Michael and Debi Pearl have been teaching for far too long.

Fledglings Fly

The house is quieter than usual tonight.

Scattered evidence remains:
a pair of shoes,
a jacket thrown in a chair,
they can stay for now.
A half full glass on the table,
two extra cars in the driveway; keys hanging on their hooks,
who knows when they'll be used again.

Two of our three flew today. Thankfully, landed safely in their new home (temporary albeit) for technical school.

Praising God for making a way, a different way than what we'd planned. His ways are different; His plans are different.

Praying for His sustaining grace to adjust to the new quiet, for His protecting hand, guiding, teaching, growing boys into men.

For our Great Backyard Bird count, we saw the usual suspects:

Carolina Chickadees,

Song Sparrows,

Eastern Towhees,

American Goldfinches,

Mourning Doves

(no baked potato birds??, inside joke, sorry),

Northern Cardinals and

Tufted Titmice.

Just this morning, one day after the offical bird count, we saw our fist Baltimore Oriole!

We believe it to be a female. After munching on nuts and seeds, she flew back into our woods, happily ringing our wind chimes as she went.

Great Backyard Bird Count is...

This weekend is the annual Great Backyard Bird Count!

Surpisingly, I've never participated! This is the year for me!

What is it?

Anyone can participate, from beginning bird watchers to experts. It takes as little as 15 minutes on one day, or you can count for as long as you like each day of the event. Surprise Visit from Distant Relatives Today!

One of the birds in the photos is unusual in these parts. Thanks to What Bird I learned its usual habitat is southwest Canada and winters in Mexico. Not sure how it ended up on the East Coast.

It's the first time we've seen a Black-headed Grosbeak. And there are 2 of them (at least)! First we thought it was a Baltimore Oriole. Nevertheless, quite a good spy!

They are in the same family as the Cardinals. Perhaps these birds, with their stunning black heads and cinnamon bellies decided a visit to their East Coast cousins was in order this winter.

They seem quite content in their accomodations, under our shed!

UPDATE!

Bothered by why the west coast Black-headed Grosbeak would winter in NC rather than warm Mexico we did some further research. Mystery solved when we discovered that our distant relatives were from not as far away as we originally thought. In fact they do come from Canada, "from southern Saskatchewan east to Maine and south to California and Florida. Spends winters across much of eastern U.S. north to Nebraska and southern New England. Preferred habitats include undergrowth and brushy edges of open woods. Northeastern birds favor young jack pines or second-growth oak forests; southern birds seek scrub oak or palmetto."

What we actually have are the Eastern Towhees. We are still pleased to have them.

Here's a picture of the Grosbeak. You'll see why we were mistaken on their identity. The have similar colors, but the Grosbeak do not have the white underbelly that the Towhee has.

We are also pleased to welcome to the mix the slate colored, Dark-Eyed Junco. These adorable little birds look like they're wearing a tuxedo to me! Love their yellow beaks too!

I just got around to watching this movie last night. It was so good! Afterward I hunted around on my favorite book site to see if I could swap a copy of Julia's book (no luck, yet). I even found Julie's blog and read the first week. Quite good, and added to my already too long list of blogs to read.

Wayne's out of town, so I went to bed late after some reading (trying to finish The Bird's Christmas Carol before its due back at the library).

Everything was going just fine this morning. I woke up to my purring alarm clock who does't care if its Saturday nor that I went to bed late. Came downstairs, fed my alarm clock, poured a hot cup of coffee with vanilla cinnamon cream and sat down to check facebook. Drove my girl for work at 8 AM. Came home.

This is where things get a bit foggy for me now. I intended to warm up Laurin's leftover full cup of coffee, but I'm not sure what happened next. All I know is that the cup of coffee remains on the counter FIVE hours later, because somehow instead of opening the microwave door, something possessed me to open the pantry door, pull out all my baking stuff....powdered sugar, chocolate chips, corn syrup, peppermint chips, oyster crackers, ranch mix, flour, sugar, salt, dry active yeast and oatmeal.

I didn't even know I had all that stuff in my pantry!

I just started baking like a fiend, which led also to cooking.

Now mind you, I LOVE to cook, but, I must confess, baking is just not my thing. My family won't eat biscuits I make, because you could use them to build a house that even the Big Bad Wolf can't blow over. And last year's fudge could have served as the mortar. Plus, I find it a bit messy, with flour and sugar dust flying around and sticky pots and utensils that are hard to wash. As a general rule I stay away from baking.

Today was different. I was relentless in my pursuit to use up all my baking ingredients that I buy with the best of intentions but never manage to get around to using. And NOW I have all these yummy concotions and I'm not quite sure who I'm giving them to!

While I was on a roll, I figured I'd prepare the chicken stock for my Grandmother's delicious Christmas Day Chicken Soup by boiling a leftover carcass from a roast chicken. I've NEVER done that before!! What in the world came over me? I feel so......like Julia today!!!

So, thanks to Julia I baked up a storm and thanks to Julie I just had to blog about it!

Orecchiette with Mixed Greens and Goat Cheese

Recipe courtesy Giada De Laurentiis (my favorite chef)
Prep Time: 15 min Cook Time: 10 min Level: Easy, Serves: 6
Ingredients:
1 cup dried orecchiette pasta
2 cups Mediterranean-style mixed salad greens
2 tablespoons sun-dried tomatoes (packed in olive oil), chopped
1 tablespoon goat cheese, crumbled
2 tablespoons grated Parmesan, plus more for garnish
Pinch salt
Pinch freshly ground black pepper

Directions
Bring a medium pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, about 8 to 10 minutes. Drain pasta, reserving 1/2 cup of the water.

In medium bowl, mix the salad greens with the sun-dried tomatoes, goat cheese, and Parmesan. Top with warm pasta and 1/2 cup of the reserved pasta water. Toss to combine and wilt the greens. Season with a pinch each of salt and pepper, or to taste. Garnish with additional Parmesan, if desired, and serve.

I used ricotta and spinach stuffed tortellini instead of the oreccchiette and it made a delicious substitute.

Verdict: Everyone enjoyed this at our weekly FLOCK gathering. This one's a keeper!!

Whose Son Is the Messiah?

Jesus stumped the Pharisees when He asked them this question (Matthew 22:41-45).

Matthew Henry's commentary on the passage:

"He took upon him human nature, and so became God manifested in the flesh; in this sense he is the Son of man and the Son of David. It behoves us above all things seriously to inquire, "What think we of Christ?" Is he altogether glorious in our eyes, and precious to our hearts? May Christ be our joy, our confidence, our all. May we daily be made more like to him, and more devoted to his service."

Who do you say He is?

We easily embrace him as the Babe away in a manger, with no crib for a bed, laying down his sweet head. Do we so easily embrace that Babe as the Great Shepherd laying down his life for his sheep?

I'm reading a thought provoking little collection of Martin Luther's Christmas sermons. Luther asks: "What could be sweeter than the Babe?"

Consider,

This sweet Babe who was born into the world just when a heavy burden was decreed to trade his light and easy burden for ours.

This Babe, the Creator of the world born in a stable without notice nor regard, lying in a wooden feeding trough. What kind of throne is that for the King of kings?

A scared, first time mother having to birth her son alone....in the town of Joseph's ancestors....where was his family, surely they could have housed them, helped with the birth? But, no one came to give the customary assistance. No one took her condition to heart. No one attended to this woman.

was there light to see what she was doing? water to bathe Him? where did the wrap come from?

. In regarding the Nativity, Luther says:
